Skinny Pink Surprise Chocolate Chunk Cookies
What’s a girl to do after several attempts to make bright pink skinny chocolate chip cookies that just won’t stay bright pink? Re-name them Skinny Pink Surprise Chocolate Chip Cookies! Then re-name again – this time to Skinny Pink Surprise Chocolate Chunk Cookies because after so many attempts, you’re completely out of chocolate chips and have to attack a chocolate bar with a knife to make your own chocolate chunks.
Yeah, that’s pretty much how my last weekend went down. Aren’t you so upset you don’t live with me? Anyway, because I spent the best part of Saturday throwing batches of cookie dough into the oven, I can now give you loads of tips on baking the best skinny cookies ever – yes, cookies can be healthy(ish!), too!
First of all, never use eggs in your cookie dough – it makes them far too spongy and omelet-tasting. Instead, use oil or butter (or both!) and you’ll get much better results. Secondly – don’t skimp on the sugar. You won’t get a great texture if you just use brown sugar – always use a mix of white and brown. And thirdly – and most importantly – refrigerate your dough for at least 24 hours! Any less and your cookies will just spread out on your baking tray and you’ll either end up with flat wafer-like cookies, or one huuuuuge monstrous cookie!
Even though they didn’t come out exactly as I’d hoped, I’m pretty happy with these cookies! Just look at the image above – they look like regular ol’ cookies, right? Then you bite into them and see that they’re actually pink! These cookies would be a great way for a gender-reveal-baby-shower-party-thing! I don’t know much about these, having never been to one, but I’m pretty sure they’d work! Although I’m not sure what would happen if you used blue food coloring, so stay on the safe side and try not to have a boy unless you want icky color cookies.
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 24 hours, 30 minutes
Yield: 15 cookies
Ingredients
- 2 tablespoons butter
- 3 tablespoons white sugar
- 3 tablespoons brown sugar
- 2 tablespoons oil
- 1 teaspoon vanilla extract
- 3/4 cup white flour
- 1/2 teaspoon baking soda
- regular pink food coloring - not the fancy paste stuff! (see more about this in the notes)
- 1/4 cup dark chocolate chunks
Instructions
- Cream together the butter and sugars for around 1 minute with an electric whisk set to medium.
- Beat in the oil, vanilla, flour, baking soda and pink coloring until everything is combined. You need to use enough pink coloring to make the dough a really bright magenta color.
- Fold in the chocolate chunks.
- Leave in the refrigerator for at least 24 hours.
- Divide the cookie dough into 15 equal-ish balls and place on a baking tray. Bake at 350°F/180°C for around 10 minutes, or until the edges have set and the cookies have just turned a light brown.
- Leave on the baking tray for an additional 5 minutes before removing to a wire wrack to cool.
Notes
If you use the good food coloring paste (the type used for icing) you'll end up with cookies that are pink on the outside, too. Regular food coloring (the liquid stuff sold in small bottles) doesn't react to heat the same way as the paste and will brown on the outside whilst staying pink on the inside.
