Key lime pie is one of my favorite desserts. I loooove the buttery, crunchy base and the thick, creamy topping that’s full of citrus-y zing! Although I never make it with the zest. Tiny bits of tough, chewy skin that I can’t pick out? No thank you! It’s super-simple to make and quite low-fat, too, which is always a plus! What would you say if I told you I reduced the fat in it even further – as well as getting rid of the raw egg yolks? Personally, I don’t have a problem eating raw egg yolks. Not on their own though – I’m not some sort of body builder (yeah, right, like any of you thought I was a body builder) but I eat the cookie dough every single time. I live life on the edge!

So how is this dessert skinny? Well, they are ‘bites’ – not whole slices of pie – and mini pies means mini calories (or double portions, depending on how you want to look at it). The cholesterol-packed egg yolks have also gone and have been replaced by my favorite healthy substitute – Greek yogurt. The Greek yogurt keeps the topping smooth and silky without the added calories or risk of getting sick from raw eggs.

And because all you guys are freaking out over the whole Valentines thing waaaay too early, I decided to jump on the bandwagon and use mini heart muffin molds to make this dessert Valentines-friendly! You could use whichever molds you like and adapt this dessert to the season – snowflake-shaped key lime pie anyone?

Skinny Egg-Free Key Lime Pie Bites

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 12 bites

Ingredients

  • 2 cups of Graham cracker crumbs
  • 6 tablespoons of butter
  • 4 limes (traditionally key limes, but if you don't have them, just use regular ones)
  • 14oz/397g condensed milk
  • 1/2 cup Greek yogurt
  • green food coloring

Instructions

  1. Preheat the oven to 350°F/175°C and melt the butter in the microwave. Stir in the Graham cracker crumbs until they've absorbed all the liquid.
  2. Press about 2 tablespoons of the cracker mixture into the base of each mold and bake for 10 minutes.
  3. Using your palms, roll each lime on the counter for around 30 seconds like your using a rolling pin. This will ensure you'll get the most juice out possible. Slice each lime in half and squeeze all the juice out through a sieve into a bowl.
  4. Stir the condensed milk and Greek yogurt into the lime juice. If your filling isn't as green as you'd like, you can also add in some green food coloring. Whisk until thick and creamy.
  5. Evenly distribute the filling between your molds and leave to set in the fridge overnight.

  3. You have just piqued my interest. I love key lime pie but I never make it. Love the idea of the greek yogurt. Now I’m just going to have to try this. Oh well, another few extra calories I’ll have to burn but I always think it’s definitely worth it when it comes to dessert.
