One Bowl Chocolate Cupcake for One
Sometimes you just need to shove a deliciously chocolate cupcake in your mouth, right ladies?
Fortunately, I have the perfect solution for your cupcake craving – One Bowl Chocolate Cupcake for one. Yup – this recipe makes just one cupcake and takes less than 30 minutes from start to finish. How great is that? If you insist on being kind and sharing, you can double the recipe and give the other cupcake to someone (or eat it yourself, I won’t judge.) But seriously, I’ve tried doubling the recipe and it turns out fine – anything more than doubling and you’re on unfamiliar turf and I can’t guarantee the results.
Make this cupcake if you can’t get the thought of a sweet, rich and (yes, I’m going to say it) moist chocolate cupcake out of your mind, but have absolutely no self-control and wouldn’t be able to stop yourself from eating a dozen if you tried. Hey – that’s why I made it!
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes
Yield: 1 cupcake
1 cupcake
Ingredients
- 1 tablespoon egg white
- 1 tablespoon white sugar
- 2 tablespoons butter, melted
- 1/4 teaspoon vanilla essence
- 2 tablespoons all-purpose white flour
- 1/4 teaspoon baking powder
- 1 tablespoon cocoa powder
- 1 tablespoon chocolate, finely chopped
- pinch of salt
- 1 tablespoon milk
Instructions
- Preheat the oven to 350°F and line a muffin pan with 1 liner.
- Beat the egg white until soft peaks form then gently stir in the sugar, melted butter and vanilla.
- Fold in the flour, baking powder, salt, cocoa powder and chocolate and gently stir until smooth.
- Bake for 8-12 minutes, or until the cake is fully set. Let cool completely then frost as desired.
