On Wednesday I shared a recipe for Instant Strawberry Vodka Sorbet and today I’m sharing this amazing recipe for Homemade Chocolate Chip Cookie Ice Cream Sandwiches. Two soft and chewy cookies sandwiched together with simple vanilla bean ice cream and melted milk chocolate. Best. Dessert. EVAH! Now I’m not going to lie to you – if you haven’t already got some cookie dough/baked cookies and homemade vanilla ice cream idly sitting in your freezer, this recipe is going to take a fair bit of time and effort. But trust me – every single second you spent spooning out cookie dough onto a baking sheet will be so worth it. I can proudly say these chocolate chip cookie ice cream sandwiches were the best I ever had and I thoroughly believe that’s because I made every single part of this recipe from scratch. The cookies I used were these Soft and Chewy Chocolate Chip Cookies, but feel free to use your favourite recipe. I prefer these cookies because they’re small (they’re made with only 1 tablespoon of cookie dough each) and when they come out of the freezer they’re soft enough to nibble straight away. The ice cream I used was this Simple Vanilla Bean Ice Cream, but again – feel free to use your favourite recipe for vanilla ice cream if you have one. I love this recipe because it uses real vanilla straight from the bean and the texture is amazing – so smooth and creamy! Although I made everything from scratch (except the chocolate – that came from a packet) you can totally use your favourite bakery or store-bought cookies and favourite ice cream parlour or store-bought ice cream. Although the result might not be as incredible as if you’d made it all yourself, I bet they’ll still be pretty amazing – especially if you make them with all your favourite stuff! I first made these homemade chocolate chip cookie ice cream sandwiches ages ago – around the beginning of May. And they’re just so good I kinda feel bad for not sharing them earlier – like I’ve been holding out on you! When I bite into them, I’m just so overwhelmed with flavours and textures. Soft and buttery chocolate chip cookie gives way to smooth and creamy ice cream which instantly starts to melt as soon as it hits your lips. Unlike a regular chocolate chip cookie, the sensation of these frozen soft and chewy chocolate chip cookies is almost like cookie dough, and I don’t have to tell you how awesome eating cookie dough is. And that’s just the ordinary side – don’t even get me started on the chocolate-covered side! The hardened milk chocolate takes this already drool-worthy dessert to an entirely new level. At first, it cracks against your lips when you first bite it, but as it slowly warms up, it melts slightly and clings to the cookie, creating a magical cold ice cream/cold cookie dough/warm melted chocolate effect. Homemade Chocolate Chip Cookie Ice Cream Sandwiches Prep Time: 10 minutesCook Time: 1 hour, 30 minutesTotal Time: 1 hour, 40 minutes Yield: 4 chocolate chip cookie ice cream sandwiches Ingredients8 small soft and chewy chocolate chip cookies 1/2 cup simple vanilla bean ice cream, left to thaw slightly at room temperature for 10 minutes 1/2 cup milk chocolate chipsRecipeTake 4 of the cookies and spread a generous amount of simple vanilla bean ice cream on the flat side. Use the other 4 cookies to sandwich the ice cream in place. Place the ice cream sandwiches in the freezer for at least an hour. Meanwhile, melt the milk chocolate chips in the microwave for around 1 minute or until completely melted. Remove from the microwave and stir every 20 seconds or so to make sure they don't burn. When melted, leave the ice cream to one side for a couple of minutes to cool to room temperature. After the ice cream sandwiches have sat in the freezer for an hour, fill a shallow dish or bowl with warm water and place the bowl with the melted chocolate inside - this will help keep the chocolate melted whilst you dip the frozen ice cream sandwiches in it. In turn, dip half of each ice cream sandwich into the melted chocolate - you can use a spoon or knife to spread the chocolate up the sides of the cookie, if you're having trouble. Place each chocolate-coated ice cream sandwich on a flat tray and place in the freezer for 30 minutes to allow the chocolate to fully set before storing in the freezer inside a sealed container or Ziploc-style bag.NotesDon't have an ice cream machine to make the simple vanilla bean ice cream?
