Yes, I said healthy. Healthy, people! And not the kind of healthy that uses 1 tablespoon less of butter so it must be healthy or it uses whole wheat flour instead of white flour so it’s super-duper good for you. I’m talking about real healthy – with proteins and nutrients and stuff. How did I do it? It’s all thanks to those little golden round beans of yum – garbanzos.

If you’re a regular reader of Pink Recipe Box then you might remember that I’ve experimented with garbanzos one or two times before. Sometimes the result has been amazing – Healthy Chocolate Chip Cookie Dough Dip I’m looking at you – whereas other times it has been something akin to failure – this is where you come in Deep-Dish Cookie Pie. I’m definitely notching this recipe up as one of the successful ones.

How are your January diets coming along? Mine is going swimmingly, seeing as how I’m not on one. My Official Treat Taster did sort of drag me into agreeing to be more active, so we played our first game of tennis this year yesterday evening. When I say ‘played tennis’ I mean I ran around a tennis court in my socks like a dog just let off a lead. I’m not very good at tennis – I mean, who can get their head around that scoring system?! – but I am entertaining. Anyway! Back to your January diets. If you’re looking for a sneaky snack that you can enjoy from time to time without ruining your future bikini-perfect figure, this is it.

If you’re being really strict with yourself, you can even omit the chocolate coating and roll the cookie dough balls in cocoa, icing sugar or hot cocoa powder or even just leave the coating out altogether! However you choose to enjoy them, I hope they become one of your new favorite healthy treats – they’re certainly one of mine!

Healthy Peanut Butter Chocolate Chip Cookie Dough Bites

Total Time: 15 minutes

Yield: 20 cookie dough balls

Ingredients

  • 1 cup cooked garbanzos, drained
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 4 tablespoons peanut butter
  • 1/4 cup chocolate chips
  • Optional: melted chocolate, cocoa powder, icing sugar for coating

Instructions

  1. Place the garbanzos, oats, brown sugar, milk, vanilla and peanut butter into a food processor and blitz until smooth.
  2. Stir in the chocolate chips.
  3. Divide the mixture into balls as big as you like and dip in melted chocolate or roll in the coating of your choice.

Notes

1. I use garbanzos from a jar that have been stored in some sort of water for this recipe. If you only have dried garbanzos, make sure you soak them before you use them and measure them after they've been soaked. 2. This recipe only uses a small amount of sugar. If it's not sweet enough for you, you can always add more!
