Cuban Beach Cocktail

The weather is getting warmer, the days are getting longer and it’s almost impossible to park outside our beachside complex on a weekend. It’s official – summer is almost here! Which means we can start enjoying tropical cocktails like this Cuban Beach Cocktail.

Who am I kidding? I enjoy cocktails like this all-year-round. Even more so when family are here to stay. Believe me, I need to then.

By the time you’re reading this, my sister-in-law will be here to stay with us for five days. Now, if it was a choice between my sister-in-law visiting and my mother-in-law visiting, I’d definitely pick the sister. But this year I don’t have to pick because less than one week after my SIL goes home, my MIL will be staying with us for a fortnight. Lucky, lucky me.

Which is why I need cocktails. Lots and lots of cocktails. Cocktails to take my pain away and cocktails to make family members more bearable. They’re pretty much the same thing, but who cares, right?

I only see my sister-in-law once every year or so and we’ve somehow become drinking buddies. We went for a hike up the mountain along the beach where I live one morning when she visited a few years ago. We set off really early and had finished the hike by midday. Decided to stop at the little beach bar for a glass of wine on the way home…

Ended up getting back to my apartment (which is quite literally a two-minute walk away from the bar) sometime around 7pm. It gets better – I was making lasagna for dinner and dropped ALL the mince on the floor. It gets even better – I was so ‘tipsy’ that I was adamant it would be fine and tried to scrape it back in the pan. I bet they’re so proud I joined their family.

Last time she came to visit, we decided to play it a bit more low-key. I made us a batch of this Sparkling Summer Sangria which we drank on the balcony whilst we chatted. We decided that the sangria was soooo good we couldn’t stop at one bottle and drank three cava bottles’ worth of the stuff.

So what I’m trying to say is, there seems to be a correlation between my sister-in-law visiting and consuming vast quantities of alcohol. I think My Official Treat Taster might see the correlation, too – he’s taken the five days off work so we won’t be alone together and uhh… over-indulge?

But anyway, whether you prefer to stop at one cocktail or love to splurge over catch-up time with friends and family, you need to make these cocktails this summer. They’ve got rum, vodka and triple sec in them, so they’re pretty strong, but equally addictive and refreshing.
