Creamy Lemon Oaty Bars
So, it’s my birthday this week! And although I’m super excited, it sucks having a birthday close to a holiday. All you guys are too busy fussing over football food and Valentine’s Day treats to remember to make me a card or buy me a gift. So, to spite you all I’m not going to post a football recipe. I’m not going to post a Valentine’s dessert. I’m just going to post these plain-ol’ creamy lemon oaty bars. But they’re so creamy and oaty and delicious that the joke’s on me, really.
Lemon is one of my ultimate favorite flavors when it comes to dessert – after chocolate, of course. (Keep that in mind when you’re deciding on which cake you’re going to bake for me.) And although the citrus taste is very subtle, it works so so well with the creamy white chocolate filling and the ah-maz-ing crumbly texture of the topping.
I’m being 100% honest when I say that this is one of the best desserts I’ve made in a while. I usually get fed up with desserts after a day or so and end up shoving the rest in the freezer. But these bars? No way. They’ve been in the fridge since Saturday and I have had at least one every single day. That’s a lot of dedication and love, people!

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Yield: 9 bars
Ingredients
- 14oz condensed milk
- 1/4 cup lemon juice
- 1 cup white chocolate chips/chopped up white chocolate
- 2/3 cup butter, softened
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 cups oats
- 1 teaspoon baking powder
- 1 egg
Instructions
- Preheat the oven to 350°F/180°C and mix together the butter, brown sugar, flour, oats and baking powder.
- Scoop out 1 2/3 cups of the mixture and place in a separate bowl.
- Mix in the egg 1/2 of the white chocolate chips with the original mixture. Scrape into a lined 9x9 baking tray.
- In another bowl, beat the condensed milk and lemon juice together. Add in the remaining white chocolate and pour this over the crust batter.
- Crumble the dough you scooped out a few steps earlier on top of the condensed milk.
- Bake for 30-40 minutes or until the top begins to turn golden. Leave to cool before cutting into squares and storing in the fridge.
