About Me

I’m Nicola and I am completely, utterly, head-over-heels in love with food. I plan my days around it, I plan my vacations around it, I plan my entire life around it. You could say food has become a bit of an obsession with me. And I could reply that that is a bit of an understatement.

I have absolutely no culinary training and I’ve never been to a single cooking or baking class in my life. Everything I know I’ve learned through research, trial and error, and watching countless cookery programmes on TV.  In case you’re wondering, Come Dine With Me is my favourite. Not really a cookery programme per say, but it’s still where my heart’s at.

I like to think that my fondness for food originates from my family. My first baking memories are of me standing in my grandma’s kitchen, barely tall enough to see over the table, scraping the large wooden spoon along the bright orange mixing bowl and licking the chocolate cupcake batter off. Even though it was so long ago, I can still remember the taste and to this day I have been unable to recreate her gorgeous recipe!


My interest in savoury cooking definitely comes from my dad who used to spend hours in the kitchen on Sundays, whipping up his own batter to make the perfect Yorkshire puddings. Although they’re not my favourite dish to eat, I do love making them and watching them pop out of the trays as they rise in the oven.

After visiting Pink Recipe Box, my aim is for you to want to jump into your kitchen and start creating edible masterpieces yourself. Whether you use my exact recipes or simply take your inspiration from them and make whole new recipes, I don’t care – just find your foodie passion and start making magic. 

I live with My Official Treat Taster who tries all the recipes I create (except the ones with garbanzos – he hates those) before I post them on Pink Recipe Box to ensure they’re good enough for you. We live in a small beachside an apartment with a tiny kitchen. So tiny in fact that most of the food prep for Pink Recipe Box and our regular meals is done on the floor. I wish I was kidding, but I’m not. See how many of my photos you can spot my floor tiles in.


Unfortunately, Pink Recipe Box doesn’t quite pay the bills (yet) so I have a job. Fortunately, it’s one of the best jobs in the world and I absolutely love every single second of it. I’m a freelance travel writer so not only do I get to work from anywhere in the world at any time I like, but I also get to write about all sorts of interesting places and events. Not being a one-trick pony, my writing isn’t limited to travel – I’ll tackle pretty much any writing project!

In addition to posting my recipes right here on Pink Recipe Box, I also write two healthy recipes each week for ActiveWearUSA Magazine. Not that I’m bragging or anything, but you should so follow that link and check me out.

One of the biggest projects I’ve taken on in my freelance writing career is co-authoring Moving to Tenerife – a book which (you guessed it!) is all about moving to Tenerife.

Now for the techy stuff. All photos on blog posts dated before July 2014 (ish) were taken with a baby pink Praktica Luxmedia 12-z4 camera. All the photos on blog posts dated after that were taken with a not-so-baby-pink Sony DSC-HX50 camera which I’m currently head over heels with, despite it’s boring black colour. I do all my blog design and image touching up myself through PicMonkey.

    Thanks so much for stopping by!
    Vanilla essence is the same as vanilla extract – they’re both strong vanilla liquids usually sold in tiny bottles in the baking aisle of supermarkets. Hope this helps :)
